  • Sicilian Organic Flour Rimacinata Cuore 1kg | Molini del Ponte

$15.00 Add to cart Ancient Grain Flours

Molini del Ponte is one of Sicily’s most respected mills, dedicated to preserving Sicilian grain biodiversity and the character of traditional wheat varieties. Their philosophy begins with the grain: exceptional flour comes from exceptional wheat, grown with respect for the land and milled to preserve its natural flavour, aroma and identity.

As an organic flour, the wheat is cultivated without synthetic pesticides or herbicides, including glyphosate, and without synthetic chemical fertilisers.

    PERFECT FOR BREAD

Particularly suited to pane casereccio, sourdough and rustic Italian bread, Mediterranea Tipo 1 gives dough greater character, producing bread with a fragrant crust, aromatic crumb and distinctive wheat flavour.

Also excellent for focaccia, pizza, bread rolls and naturally leavened doughs.

    STORAGE

Because this is a pure, minimally treated organic flour, made without preservatives, synthetic pesticides or chemical treatments, it requires a little extra care in storage.

In warm conditions, naturally occurring pantry moths (farfalline della farina) can occasionally develop. This is not unusual in natural, untreated grain products. To preserve the flour at its best, keep it tightly sealed in a cool, dry and dark place, away from heat and direct sunlight.

  • Unfiltered Biodynamic Organic Apple Cider Vinegar with Mother 500ml

$18.00 Add to cart Organic Vinegars

Crafted from carefully selected organic apples and produced following biodynamic and organic principles, this organic apple cider vinegar reflects purity, balance, and integrity at every stage. The apples are naturally fermented, unfiltered, and unpasteurised, preserving the “mother” — a living culture of beneficial bacteria and enzymes that forms during fermentation.

This process allows the vinegar to retain its natural complexity, offering a vibrant acidity with subtle fruity notes and a soft, rounded finish. Biodynamic farming goes beyond organic standards, focusing on soil vitality, biodiversity, and a holistic agricultural ecosystem. The result is a product that is not only clean and authentic but also deeply connected to its origin.

Naturally rich in acetic acid and bioactive compounds, apple cider vinegar has long been appreciated as part of a balanced lifestyle. It is commonly incorporated into daily routines for its refreshing character and versatility, making it a staple in both kitchen and wellness rituals.

    Benefits & Suggested Use

Biodynamic and organic apple cider vinegar is valued for its natural composition and traditional production method. When consumed in moderation, it can be part of a well-rounded diet, appreciated for its digestive support and role in enhancing flavour without added sugars or artificial ingredients.

For daily use, dilute 1–2 teaspoons in a glass of water and enjoy before meals as part of a simple routine. Its bright acidity also makes it ideal in salad dressings, marinades, and vegetable preparations, where it adds freshness and depth. A small splash can elevate sauces or balance richer dishes, bringing clarity and structure to flavours.

Always dilute before consumption to protect enamel and ensure a balanced intake. Store in a cool, dry place, and gently shake before use to redistribute the natural sediment.

A refined essential for those who value quality, transparency, and a more considered approach to everyday ingredients.

  • Sicilian Organic Ancient Grain Pizza Flour 1kg | Molini del Ponte

$19.00 Add to cart Ancient Grain Flours

Created specifically for pizza, this organic pizza flour is a carefully balanced blend of ancient Sicilian soft and durum wheats. The grains are organically cultivated in Sicily and milled by Molini del Ponte, a family mill established in Castelvetrano in 1967 and dedicated to protecting the aromas, flavours and biodiversity of traditional Sicilian wheat.

Unlike highly standardised modern flours, this blend reflects the distinctive character of the island’s grain varieties. It produces a soft, workable dough with a pleasant wheat aroma and fuller flavour, bringing authentic Sicilian character to homemade pizza.

    How to use it

Particularly suited to classic round pizza, pizza in teglia, focaccia and rustic flatbreads, this organic ancient grain flour creates dough with an aromatic crust, tender interior and naturally rich wheat flavour. It can be used for same-day preparations, but allowing the dough additional time to rest and ferment will help develop greater aroma and character.

Produced in accordance with European Union organic-production standards, this organic flour is made from wheat grown without genetically modified ingredients or synthetic herbicides such as glyphosate.

The grain is grown, selected and transformed within the producer’s controlled supply chain, maintaining complete traceability from the field to the finished flour.

Agricola on its own certified-organic fields in Capitanata, Puglia. The grain is grown, selected and transformed within the producer’s controlled supply chain, preserving a direct connection between the land, the wheat and the finished flour senatore cappelli.

Arte Agricola gently stone-mills the whole grain, retaining the germ and bran and producing a fine, full-bodied flour with a warm golden colour. Cultivation near the Margherita di Savoia salt pans contributes to the distinctive character of this ancient Puglian wheat.

This is the same organically grown Senatore Cappelli wheat used to produce our Senatore Cappelli ancient grain pasta, which is bronze-drawn and slowly dried to preserve its authentic flavour and texture.

Particularly suited to homemade fresh pasta, this Flour Senatore Cappelli creates dough with an inviting golden colour, excellent character and a delicate yet persistent wheat aroma. Use it to prepare orecchiette, tagliatelle, cavatelli, lasagne sheets, ravioli and other traditional pasta shapes. It is also excellent for pane casereccio, sourdough, focaccia, pizza, grissini and savoury baked goods.

    How to use it

  • Sicilian Organic Ancient Grain Flour Perciasacchi 1kg | Molini del Ponte

$25.00 Add to cart Ancient Grain Flours

Perciasacchi is a rare Sicilian durum wheat whose unusual name means “sack piercer”, inspired by its long, pointed kernels that were said to pierce the grain sacks in which they were stored.

Once widely cultivated throughout Sicily, this ancient variety was gradually replaced by higher-yielding modern wheat. Its recovery represents the preservation of Sicilian agricultural biodiversity and generations of traditional farming knowledge.

Molini del Ponte produces this Sicilian organic ancient grain flour Perciasacchi from organically grown Perciasacchi wheat cultivated in Sicily without glyphosate or synthetic pesticides. The grain is slowly ground using traditional natural-stone millstones, helping preserve its characteristic aroma, warm golden colour and authentic wheat flavour.

Perciasacchi is particularly valued for its naturally high protein content and distinctive character. As an ancient durum wheat, however, it behaves differently from highly refined modern bread flour: dough should be handled gently and allowed time to rest and ferment.

How to use it Perfect for Pasta

Organic Ancient grain flour Perciasacchi can be used on its own for fresh pasta and rustic recipes. For highly leavened bread or pizza, it may be blended with a stronger flour to create greater elasticity and volume while retaining its distinctive flavour.

  • Pendolino Extra Virgin Olive Oil Giacomo Grassi 250ml

$41.00 Add to cart Cold Pressed Olive Oils

    pendolino

Pendolino extra virgin olive oil represents a rare opportunity to rediscover a cultivar traditionally confined to a supporting role. Widely used as a pollinator, Pendolino is seldom vinified—or rather, milled—on its own. We chose to do exactly that.

By harvesting and processing Pendolino separately, we reveal a mono-varietal extra virgin olive oil with unique characteristics that challenge conventional assumptions about so-called “secondary” cultivars.

Originally from the Florentine area and now widespread across the region, Pendolino is named after its distinctive pendulous growth habit. Its flowers are self-incompatible, while the olives—elongated and medium-sized—ripen evenly and relatively early, making timing and precision essential.

This oil is a reminder that biodiversity matters—and that some of the most interesting expressions emerge when we give overlooked varieties the space to speak for themselves

    SUGGESTED MATCHING FOOD

Characterised by a light fruitiness and a pronounced, vibrant peppery finish, this extra virgin olive oil enhances delicate and elegant dishes, where more bitter oils might overwhelm subtle flavours.

It pairs beautifully with legumes, raw and cooked fish, and mixed vegetable salads. Particularly striking with risottos featuring prawns and zucchini, it also reveals an unexpected harmony with desserts and gelato—especially custard or vanilla, as well as pistachio and hazelnut.

  • Olivo Bianco Extra Virgin Olive Oil Giacomo Grassi 250ml

It reflects a philosophy rooted in respect for biodiversity, timing, and restraint—where clarity of flavour is never forced, but gently revealed.

Produced from carefully selected olives harvested at the ideal moment of ripeness, Olivo Bianco expresses a graceful aromatic profile, marked by freshness, balance, and a refined structure. The palate is harmonious and luminous, offering subtle vegetal notes, gentle fruitiness, and a clean, lingering finish that never overwhelms.

    SUGGESTED MATCHING FOOD

This is an extra virgin olive oil designed to elevate rather than dominate—ideal for dishes where purity, texture, and finesse matter most. It is particularly suited to raw fish and seafood, delicate vegetables, white meats, fresh cheeses, and simple Mediterranean preparations, where each ingredient is allowed to speak.

Olivo Bianco is a quiet statement of mastery: understated, precise, and deeply expressive of its origin—an oil for those who appreciate nuance over intensity, and elegance over excess.

  • Organic Uovo di Piccione Extra Virgin Olive Oil Torrerivera 500ml

$73.00 Read more Cold Pressed Olive Oils

Uovo di Piccione is a rare and lesser-known olive variety native to Puglia, named after the distinctive egg-like shape of its fruit. The name—literally “pigeon egg”—refers to the olive’s rounded, compact form, which sets it apart visually from more elongated Apulian cultivars.

What makes Uovo di Piccione truly unique is its natural balance. Unlike many southern Italian varieties known for intensity and sharp bitterness, this cultivar produces an extra virgin olive oil with measured structure, gentle bitterness, and refined aromatic clarity. It is expressive without being aggressive.

From an agronomic perspective, Uovo di Piccione is valued for its consistent oil quality and stability, even when harvested early. The olives develop a clean aromatic profile marked by fresh olive, green almond, and subtle herbaceous notes, while maintaining elegance on the palate.

Because of its limited diffusion and lower commercial yield compared to more widely planted cultivars, Uovo di Piccione remains largely unknown outside Puglia. When bottled as a single-variety extra virgin olive oil, it offers a rare opportunity to experience a more restrained, precise expression of Pugliese olive-growing, one that highlights finesse rather than power.

    SENSORY PROFILE

In the glass, oils made from Uovo di Piccione stand out for their smooth progression: a soft entry, a discreet bitterness through the mid-palate, and a light, well-integrated peppery finish. This makes the variety particularly suited to raw use, where nuance and harmony are more important than sheer intensity.

    SUGGESTED MATCHING FOOD

PITTED EXTRA VIRGIN OLIVE OIL, WHY IS IT BETTER?

Pitted extra virgin olive oils are better because they are made from olives that have been carefully pitted before centrifugation(or pressing using an old, but more recognizable term). This process results in a smoother and cleaner flavor profile HIGH IN POLYPHENOLS and ANTIOXIDANTS, as the bitterness from the pits is removed. Pitted olive oils also tend to have a longer shelf life.

Discover Armonia high phenolic Le Tre Colonne, carefully cold-extracted from Coratina and Favolosa olives at peak ripeness. With 725mg/kg of polyphenols, this Armonia high phenolic EVOO delivers powerful antioxidant and anti-inflammatory benefits for heart health, gut support, and immune function.

Armonia is strong and delicate and the same time, not bitter and robust like Coratina or Olisir but high in polyphenol anyway.

Why Choose Coratina Le Tre Colonne:
High Polyphenols: Nearly 1000 mg/kg of bioactive compounds supporting overall wellness.

Cold-Extracted Purity: Preserves all nutrients, flavor, and antioxidants for maximum health.

Bold, Robust Flavor: Intense, peppery, and fruity notes ideal for drizzling, finishing dishes, or daily wellness routines.

Lab-Tested Excellence: Certified for extra virgin integrity and polyphenol content, ensuring top quality in every bottle.

These producers use cutting-edge machinery for cold extraction. Early harvesting and cold extraction are essential for maintaining high phenolic content, though they yield less oil. While standard olive oil production achieves a 25% oil yield, high-phenolic extra virgin olive oils or high premium extra virgin olive oils produce only 7-9%. Additionally, every step—from tree cultivation and milling to storage and shipping from Italy to Australia (using temperature controlled containers) is optimized to deliver superior extra virgin olive oil, rich in wellness benefits and exceptional flavor.

    Check the lab-analysis

Pitted olive oils represent less than 1% of global extra virgin olive oil production, making Carpellese a truly distinctive expression of Italian olive-growing biodiversity.

A rare monocultivar extra virgin olive oil produced exclusively from Carpellese olives, an ancient native variety cultivated around Serre in the province of Salerno, Campania.

Created by master producer Antonino Mennella, this exceptional EVOO is made using the rare denocciolato—or pitted—method. Before extraction, the stones are removed from the olives, allowing the character of the fruit to emerge with remarkable clarity, elegance and aromatic purity.

    Why Pitted Olive Oil?

In conventional production, olives are crushed together with their stones. For a pitted oil, the stone is removed before extraction—a technically demanding process requiring specialised equipment and substantially more fruit.

The result is an EVOO distinguished by its:

Greater aromatic clarity, Silky, elegant texture, pure expression of the olive variety, refined balance of bitterness and pepperiness

Carpellese is not simply an olive oil. It is a limited-production expression of Campania’s agricultural heritage, crafted for those who value rare varieties, precision and extraordinary Italian provenance.

    SUGGESTED FOOD MATCHING

Its elegance and versatility make it ideal for steamed or grilled fish, sea bass and seafood, fennel and leafy salads, white beans, legumes and vegetable soups, stuffed or sun-dried tomatoes, beef and grilled steaks, fresh cheeses, and as a finishing touch for pasta and risotto.

Ascolana Tenera is one of Italy’s most refined and precious olive varieties, prized for its naturally delicate character and extremely limited production. Better known for its table olives, when carefully harvested and cold extracted, Ascolana Tenera produces an extra virgin olive oil of remarkable finesse—subtle, polished, and profoundly elegant.

The rarity of Ascolana Tenera as an olive oil lies in its low yield and demanding processing. Only meticulous selection and precise extraction preserve its fragile aromatic profile. As a result, production volumes are extremely small, making this oil sought after by chefs and collectors alike.

Presented in a beautiful, refined bottle, Ascolana Tenera is as much a visual statement as it is a sensory one. It is designed for moments where elegance matters—raw use only, where its delicacy can be fully appreciated.

Check the lab-analysis DEN Evolution Pitted extra virgin olive oil

Den Evolution pitted extra virgin olive oil reaches one of its most advanced expressions in Le Tre Colonne’s DEN Evolution. Crafted through denocciolato extraction, the pit is removed before milling, allowing the pulp — the part richest in aromatic precursors and naturally occurring antioxidant compounds — to dominate the final profile.

WHY PITTED EXTRA VIRGIN OLIVE OIL MATTERS

Pitted-fruit processing isolates the pulp, where most flavour compounds and antioxidant molecules are concentrated. This allows:

    • Sharper sensory definition

    • A more harmonious bitterness/spice ratio

    • Improved chemical resilience

    • Clearer expression of cultivar characteristics

This makes DEN Evolution a valuable reference for anyone exploring how extraction techniques influence flavour architecture and long-term performance.

    WHAT MAKES DENOCCIOLATO EXTRACTION UNIQUE

This specialized method removes the stone before malaxation. Scientific research shows several advantages compared to whole-fruit processing:

    • Fewer pit-based oxidative enzymes

    • Cleaner aromatic development

    • Enhanced stability and slower oxidation

    • Reduced tannic bitterness from the kernel

These factors create a more precise, elegant structure while preserving the character of the fruit.

    SENSORY PROFILE

DEN Evolution presents a refined interpretation of the Coratina aromatic profile:

    • Deep green notes: bay leaf, rosemary, artichoke, wild chicory

    • Structured but balanced bitterness

    • A clean, long pepper finish

    • Greater aromatic purity thanks to the absence of pit tannins

The result is a vivid, focused style ideal for those who appreciate technically advanced extraction methods.

    SUGGESTED FOOD MATCHING

Great in your wellness morning ritual, on meats and veggies, educational tastings comparing denocciolato vs whole-fruit processing.

A refined, wellness-driven selection designed for those who approach nutrition with intention. This bundle brings together three exceptional products—each crafted with precision and respect for nature—to support a consistent, elevated morning routine.

At its core are two of the most distinctive high-polyphenol extra virgin olive oils available. Pamako Monovarietal, sourced from centuries-old trees in Crete, is known for its exceptionally high natural phenolic content and intense profile. Alongside it, Erede by Francesco Pepe, an organic monocultivar from centennial Marinese trees, offers structure, depth and balance.

Completing the trio is a biodynamic and organic apple cider vinegar, naturally fermented, unfiltered and rich in living cultures. Its bright acidity provides contrast and versatility, making it an essential complement to the oils.

This is not a standard bundle—it is a curated ritual. A combination designed for daily use, where quality, origin and composition matter.

    Benefits, Suggested Routine & Disclaimer

This bundle is built around simplicity and consistency—three elements, one structured approach to starting the day.

    Suggested morning ritual:

    • 1 tablespoon of high-polyphenol extra virgin olive oil (alternate between Pamako and Erede)
    • 1–2 teaspoons of apple cider vinegar diluted in water

The extra virgin olive oils are naturally rich in polyphenols, compounds studied for their role in protecting lipids from oxidative stress when consumed as part of a balanced diet. The apple cider vinegar adds a refreshing, sharp element, often included in daily routines for its traditional digestive support and clean profile.

Beyond the morning ritual, each product stands on its own:

    • Drizzle the extra virgin olive oils raw over vegetables, legumes or grilled dishes
    • Use the apple cider vinegar in dressings, marinades or light preparations

PITTED EXTRA VIRGIN OLIVE OIL, WHY IS IT BETTER?

Pitted extra virgin olive oils are better because they are made from olives that have been carefully pitted before centrifugation(or pressing using an old, but more recognizable term). This process results in a smoother and cleaner flavor profile HIGH IN POLYPHENOLS and ANTIOXIDANTS, as the bitterness from the pits is removed. Pitted olive oils also tend to have a longer shelf life.

    SUGGESTED FOOD MATCHING

Itran’s  pitted extra virgin olive oil Madonna Dell’Olivo is great with game and legume soups as well as baked or roasted vegetable and meats.
