This coratina EVOO is high in polyphenol and it is obtained from Coratina olive varieties a native Olive tree from Puglia. The olives, once dropped on the nets, are directly emptied into baskets that are taken to the mill every 3 hours and milled immediately upon arrival at the farm mill to preserve quality.
