Production is extremely limited, with only 550 litres produced, available in 100 ml and 250 ml bottles, making this extra virgin olive oil a rare expression of Istrian olive cultivation.
The producer has received international recognition and is featured in the Flos Olei Hall of Fame 2026, one of the most respected global guides dedicated to extra virgin olive oil excellence. Mate extra virgin olive oils have also been used in exclusive culinary settings associated with the Venice Film Festival, reinforcing the brand’s connection with luxury Italian gastronomy and high-end culinary events.
Bianca Bellazza is an organic monovarietal extra virgin olive oil obtained from the Bianchera cultivar, produced in the northern Adriatic region of Istria, Croatia, between the coastal areas of Karigador (Brtonigla) and Zambratija (Savudrija).
This small production extra virgin olive oil reflects the distinctive terroir of the Istrian peninsula, where olive groves grow on limestone-rich soils mixed with the region’s characteristic red earth (terra rossa). These mineral soils, combined with the maritime climate of the Adriatic, contribute to the development of complex aromatic compounds and a structured flavour profile typical of the Bianchera variety, one of the most recognised cultivars of Istria.
SUGGESTED MATCHING FOOD
This extra virgin olive oil pairs beautifully with shellfish and raw seafood, smoked fish, and legume soups or purées. It also enhances sautéed pasta with vegetables, wild asparagus risotto, grilled fish, and sliced meats. For a more unusual pairing, it can be drizzled over yoghurt ice cream or dark chocolate. It can also be enjoyed pure with a pinch of Fleur de Sel, allowing the distinctive character of the Bianchera cultivar to fully express itself.
