The Territory A Land Like No Other
Theresa Eccher’s olive groves are located on the northern slopes of Mount Etna, in Sicily — one of the most extraordinary agricultural zones in the world.
Mount Etna, Europe’s highest and most active volcano, is not just a dramatic backdrop — it’s a living, breathing influence on the land, the soil, and the flavour of everything that grows here.
Volcanic Soil, Pure Energy
Rich in Minerals: Centuries of volcanic eruptions have created soil that’s deep, dark, and bursting with nutrients — potassium, magnesium, and trace elements that are essential for healthy olive trees.
Drainage & Aeration: The porous, lava-based soil drains well and keeps roots oxygenated, reducing the risk of disease and allowing olive trees to thrive without excess water.
Low Yields, High Intensity: These extreme conditions naturally limit production, but boost the concentration of polyphenols and aromatic compounds in the olives.
A Native Variety, Deeply Etnean
At the heart of Theresa Eccher’s Extra Virgin Olive Oil is a rare and deeply local variety:
Nocellara Etnea — an ancient cultivar that grows almost exclusively on the volcanic slopes of Mount Etna in eastern Sicily.
This olive is not to be confused with the more widespread Nocellara del Belice.
Nocellara Etnea is unique to the Etna terroir — shaped by volcanic soils, high altitude, and dramatic temperature shifts between day and night. These conditions result in a complex, polyphenol-rich olive oil that is as bold and distinctive as the land it comes from.
